Pacific Bliss

Pacific Bliss is coming out of the ocean, tumbling down onto the warm sand, and smiling up to the open skies sighing to yourself, “Can life be any better?”  At 5 percent ABV, it’s easily the most sessionable beer we make. The perfect foil to the bold spirits barrel-aged blends we create, and now, in the winter, Pacific Bliss is the looking glass we peer through to see warmer seasons ahead. 

We brewed this grisette with local heirloom grains: purple barley, raw white wheat, flaked spelt, and a host of other crops that add to the fresh bouquet of flavors. Aged in French oak barrels for a year, the beer takes on a very light acidity, plus a touch of subdued oak character.

After aging, we added a light addition of Wai-Iti hops to the blend, a New Zealand variety that offers an abundance of peach, apricot and citrus aromas, embellishing this already summery beer. The effect is not juicy as much as it is delicate, like a lemon wedge rather than lemonade, complimenting this refreshing beer with a hint of bright fruit character.

Pacific Bliss would pair well with warm farro salad, melding with flavors of grain and refreshing your palate after every bite, with burrata and baguette, or with lemon garlic chicken atop linguine, where the citrus notes of the the beer would complement the sauce, and the beer wouldn’t overwhelm the flavors in the dish.
